RECIPE: Grapefruit, avocado, oyster mushroom salad
adapted from THIS!
1/2 c. cooked quinoa
1/4 pound oyster mushrooms, stemmed
1/4 avocado, cubed
1/2 grapefruit, cubed
1/4 c. spinach
1 tbsp oil
Cook quinoa according to box directions. Roughly chop mushrooms and cook in 1 tbsp oil over medium heat. Season with salt and pepper. Cook until mushrooms start to turn a light brown.
Assemble all parts. Drizzle with balsamic reduction.
